Wash, peel and chop your vegetables into small pieces Add everything to the slow cooker Dissolve the stock cubes in boiling water and pour over ingredients Place lid on slow cooker and leave to cook, when finished check for seasoning and add any flavours that you like Why not try: Adding barley, lentils, pasta or rice to make it more bulky and turns it into a real meal. These should be added 1 hour before serving or cook in a separate pot and add just before serving. This very satisfying soup is great for every season of the year and is packed full of nutrients. | Serves: 8
